Got a bit of a question for anyone who knows a bit about robotics.

Most actuators work with gears for changing speeds and torque, right?
But the problem for me here is that gearing only provides discrete values while for my project I need something that can cover a whole lot more.

Are there any actuators that allow me to specify a given torque/speed and then have it run as such without relying on gears?

Well you can use a simple DC motor, the torque is proportional to the current flowing in the motor.
You can control the current using a motor driver, these are provided by motor manufacturer, some drivers can even be set using some kind of PC interface.
Finally you can control the driver using a MCU, or just an arduino.

I'm thinking about building a mechanical keyboard; seeing as the nice ones are fairly expensive to buy I figure I might as well go the whole hog and make a project out of it.

However what I like is the diy, free firmware and ergonomy.

I have wide shoulder so for me spacing is more important than key type. I have a Microsoft Natural 4000 [http://www.microsoft.com/hardware/en-us/p/natural-ergonomic-keyboard-4000] and it's worked out well for me, except they aux. numpad means I have to reach really far to use my mouse, which causes wrist pain.

I have built a couple Phantoms and will soon be building a duck Orion V2.

A Phantom is a good place to start. You need switches, caps, diodes, stabilizers, pcb, plate, teensy, and case. I think the plate and the case are the hardest to come by, as you have to fab your own or buy an existing one. Check out Deskthority's phantom guide.

I did this one some time ago, the model is from Kade Chan (Fiery Dragon).
Tissue-foil 45x45.

In past I was fascinated with origami. Did many complex models and I have many photos here...
I recommend watch "Between the Folds", a documentary about science and art or origami.

A new way to generate green energy using gravity.

My plan is to have the following energy sources available on my own property when I buy one (I'm only 19).

Home made wind turbines, I have seen some cool low profile designs made from tin sheets, metal poles, bicycle gears and a DC motor.

Home made Bio-fuel Ethanol, because I plan to have my own Garden and make my own alcohol it will only be a bit more effort to use waste vegetable matter and distill 180 proof or higher ethanol. This can by stored and used to power a vehicle or a generator for power on demand.

Thermo electric power generation, I have always liked wood fires and will probably have one, so I could utilize waste heat and turn it into electricity by either a steam turbine or Peltier chips (which produce a current the bigger the temperature difference from the cold side to the hot side).

If I had a property with a large hill I would set up a shed and large water tanks at the top, then when I release water from the tanks it powers a water turbine like a dam. The water can also be used for my garden, alcohol distilling, bathing and drinking of course.
